The meta is very speed-heavy and the "aggro" archetypes currently outpace most the of the "control" decks these days, so finding a good control deck is tough. Closest you'd probably get is using a hand control deck, which basically slows your opponent down at the source instead of trying to keep up with all the threats they play.
Here's my most recent hand control build which I played in the December online tournament. I recorded each of the games (the first of which is embedded with the decklist and you can follow that to YouTube for the others) if you'd like to see some gameplay. I also recorded an overview of the deck that's included at the beginning of each video.
The other option that I imagine is still somewhat competitive but I don't know of an updated list for is to run a Covenant with Death-focused deck. CwD is a versatile counter that significantly slows down most of the major top tier decks, but it's a little easier to answer now than it has been in the past.
This is the deck that won Nats 2019.
There's also some variety of Job decks that I wouldn't necessarily classify as control, but they're usually defense-heavy and can stall fairly well while just plowing through with Job over and over again.
