I recently built a new deck for the first time since early church came out, but the defense is feeling a little under-powered. ant help and advice would be appreciated.

Your deck is enhancement heavy and character light. It should be the other way around, more characters than enhancements.

To fix that I'd cut Prayer and Fasting to add Barnabas. I'd also consider cutting Miracle at the Gate for Cornelius.

On the defense you can take out Misuse of Talents for The Judean Mediums. I'd also cut one other EE, probably Mist, Magician's Snakes Confusion or Crooked Ways, for Baalam (Di).

For evil enhancements, I'd drop Misuse of Talents for Two Thousand Horses - does the same basic thing, adds card draw and can be repeated with King Manasseh.  I'd also drop Crooked Ways, you've already got a couple ways to check your opponent's hand.  I'd think about replacing that with Assyrian Survivor (soul gen + initiative for Confusion/Scattered), which will help balance your EC/EE ratio.  Mist is ok for recursion, but I don't know how fast your deck is gonna be to get back to the card.  Test it, if you can consistently get that card back then maybe keep Mist, otherwise there's probably something better to put in (Foreign Wives, perhaps, since you've got Mayhem - also, there was a lot of Judges speed floating around Nats, if that's your meta you definitely want FW).

Can't speak to the offense, haven't played around with different clay stuff all that much.

Insta-posted:  Balaam's also a good option.  Totally agree with Gabe on character/enhancement ratio.

I'd be tempted to put in The Egyptian Rebel into any deck that also has Elymas (EC) in it.

Is there any way I could fit a self control in? I have been having trouble with hand control in my meta.

3 good negates and an interrupt could be more than you need. You could cut whichever you think is weakest to add Self Control.

Retribution lost soul is another good counter to hand control. You may also want to think about Drachma Coin as you have Peter to draw with it, though it doesn't stop the best hand control cards.

Both of those cards would be good adds, 4DC would be very easy to find room for with Peter, and the LS could fit in very easily.
