1. Can you have 57 cards in a deck that has 7 LSs and also the Hopper? In other words, does "not count toward the Lost Soul requirement" means that the card doesn't count at all, or just doesn't count as a LS?

2. Can Standing in the Gap stop King Merodach-Baladan from looking at my hand?

That is so weird. I have been playing all this time that the Hopper does not count at all toward deck-building requirements, so you could have a legal 57 card deck. I have been led astray..... who told me that anyway..... it must have been Roy....  :o
