StS vs Assyrian Camp

If I play sowing the seed with someone that has AC up do they just go down to */0 and sit there at */0 and can't be switched to a different character correct? Because the way STS is worded I feel like It has to complete before it can switch.

If I'm remembering correctly, and it's entirely possible that I am not, if a character is protected from convert when Sowing the Seed decreases a character to */0 or less than the character normally dies (since you specified Assyrian Camp is active and it also protects from discard so the character will just sit there) and I don't believe Sowing the Seed moves to a different character, although it may stay on the character until such a time as the character is no longer in play.

So if the character is protected from conversion. Does he/she is discarded then is STS discarded too? Or does it move on?

I don't think it moves on, sorry I may have over explained things, I have a habit of doing that, but I also haven't read the card in a while, so I'm going by memory.

At */0 or less, the character is instead converted, because by game rule the character must be discarded at that moment normally.  Therefore, this component can only be an instead ability.

Per Instead in the REG: "If a card is immune or otherwise protected from the new effect, the original effect is still applied. If a
card is immune or otherwise protected from the original effect, the card is not affected at all."

As the EC is protected from conversion, the instead does not occur; the original effect applies.  Since the EC was protected from both discard and conversion, then the EC remains in territory, unconverted, with a 0 toughness (and lessened strength, whatever that is).  Sowing the Seed remains on the character, because the "Then" on the enhancement refers to "after the EC is converted," which never occurred.

Also secondary question : ASA with Assyrian camp up. 
The Assyrians are protected from going below 0/0 discard by game rule too?

Yes.  If you are protected from discard, you are protected from all discard, including by game rule.  That's why I say that if they are protected from discard they remain even if they are */0 or less.
