My assumption is that he can only band to one of each, since each of the targets is singular. If he could band to all of them he's have to say "May band to any Saint of Virtues, any Christian Soldiers and/or any Paladins" or something like that.
He can only band to one at a time. If it said "all" it would be all, but each of these indicates a singular count of the referenced characters, no matter how many are in play (whichever versions you use or in T2).
Well, I would counter that with the possible interpretation that "may band to 'Saint of Virtue'" could be shorthand for "may band to the card title 'Saint of Virtue'" which could have multiple copies.

Idolaters says, "Capture Aaron." Does that mean if there is more than one Aaron in play that they all would be captured?
Under a certain interpretation, yes. In Redemption, <card title> is shorthand for "a card with the title <card title>" (because saying "Capture an Aaron" sounds awkward) but it could just as easily have been defined without the "a" qualifier, or with ambiguous quantity. I was merely pointing that out.

Sometimes it really is the simplest thing, and there really isn't a way to complicate this ability
There was a point where we put "a" in front of each character name just to make it clearer that it was only one of each character SoG is banding. In the end we decided it would only muddy the waters because there are already so many similar abilities that don't use that type of language.
Oh, heavens. When people use the abbreviation SoG, we won't know whether they are talking about Son of God or SOLDIER of God...
