What are the ways to reset Shimei's Taunt ability. If I activate Covenant with Death would that reset his ability?

Step 1 - Taunt with Shimei.

Step 2 - When the opponent makes a rescue block with King Rehoboam and cause Ahimelek the Hittie to fight another Hero returning Shimei to your hand.

Nathan Levorson (current National Champion of Sealed deck) uses Nathan extremely effectively in his deck. Twice he got rid of the only EC in my territory by shuffling Captured Ark (resetting it back to two uses) and then by shuffling Every Man's Sword (which certainly has advantages of not being on the table).
