If Saul is converted at any time by anything does he become Paul?

I was thinking of including I am Patience in my Hero-lite and splashing Spy for a free conversion, using his withdraw ability as a "failed rescue" and converting Saul to Paul.....

Yes. I am Patience, Holy Grail, or any other convert-to-hero card will make Saul become Paul.

same with namaan would he be the converted color, or red?

Paul is always multi-color when converted
Naaman says "The first time this character is about to be discarded, convert him to a red brigade hero", If he were being converted he would become whatever brigade that card specifies

Even if Naaman was to be converted by Holy Grail, which lets you choose what color they become?

I think you midsunderstood what I meant, Naaman is only converted to red the first time he would be discarded in battle, Holy Grail would still convert him to any brigade.
