If I have Pithom out and my opponent uses AotL/Grapes on my only Egyptian in play, do I get to use Pithom? My gut says yes, but I also know that I could be wrong.

I'd say no, AotL has to finish before Pithom can trigger, and at that point you have no Egyptians.

Didn't they decide on a definition of play already? Tim said the elders seemed to be in agreement when he gave me a ruling at nats. At least I think that's what he said.

I believe the definition this fits under is "when its special ability activates." Not sure if this is distinct from "when its special ability completes."
I am not talking about T2 unless I am explicitly talking about T2. Also Mayhem is fine now somehow!

Play has a definition. Look in the REG. ::)

To answer the original question, I expect this to work the same way as The Throne of David. It's triggered by an event that has to complete before it can resolve. In this case, once the Dominant completes there are no Egyptians in play so Pithom doesn't do anything.

Example: With TToD it's been ruled that if I block with Uzzah and use his SA (leaving me no other ECs), TToD will check, find that I control no evil brigades, so no cards are drawn.

I thought you said Play was still under discussion, and that the REG just has a temporary definition?

I don't recall saying that definition is temporary. If I did that was an inaccurate statement on my part. I believe that we plan to elaborate that definition. Jordan has written up a great explanation of play that hopefully will be published sometime in the future.
