If a player's hand is protected from opponents (ex: Simon the Zealot) can the cards listed down here still do there SA to the protected hand player?
Cherubim
Look at opponent’s hand and place the evil Dominants on deck. May band to Cherubim, a green Prophet or a teal Priest
Job Overcomes SA: For each evil brigade your opponent has in play, that opponent must discard an evil card from hand or battle. You may draw a card
1. If an opposing player with Cherubim can not look at the players hand , can they not top deck the evil dominants??
1.2 If not then should the SA on Cherubim be "Look at opponent's to place the evil dominants on deck??
If player A has a protected hand from opponents , has no evil cards in their hand and their blocking EC is immune to the other players hero and the opposing player plays Job overcomes.
2. Does Player A must somehow show that they have no evil cards in their hand?

A protected hand cannot be targeted so the opponent can do nothing to it (look, reveal, discard, underdeck, etc).
If player A has a protected hand from opponents , has no evil cards in their hand and their blocking EC is immune to the other players hero and the opposing player plays Job overcomes.
2. Does Player A must somehow show that they have no evil cards in their hand?
If the player has a protected hand and the EC in battle is immune (assuming there are no additional evil cards in battle) then the only thing Job Overcomes would do is allow the attacking player to draw 1.
