If I rescue with a Hero and my opponent plays Lies to switch for one of his Heroes (not the same brigade that I'm playing), can I play an interrupt in the original color since I'm not technically losing the battle?

no, only if when you switch, it's now your initiative. If that's the case, then since it's your initiative, you can interrupt and get your hero back.

But then, do you have to use an interrupt in the brigade of the new hero, or can you still use enhancements of the original hero's brigade?...or possibly both?

You can use an interrupt in either your original brigade or the new brigade if you're losing.
