If you (the rescuer) just played a CBN enhancement that will win the battle, can the opponent then play a card like Joseph in Prison that says "interrupt the battle and remove all cards in battle from the game?" (Because he would be interrupting the battle, not your enhancement, right?)

No, the cbn ability has to complete before another card can be played. If it results in no evil characters left in battle then there is nobody to play the enhancement on.

If it’s a CBN enh then you can’t interrupt it. An Interrupt ability targets the last ability that an opponent played, which in this case was a CBN ability.
