Can I band armourbearer to hur? Wasn't he in the earthly battle the picture depicts him in?

Moses was the commander of Israel's Army until Joshua came along. So he would qualify as #2. There is no evidence that Hur did any of the above, he just played a supporting role (in a more literal sense than usual).

Is there a minimum number of people for something to be called a "battle"?  For example, if all that was recorded was that this one guy fought this one other guy, does that make him having "fought in an earthly battle"?  Or does "earthly battle" require more than 1 on each side?

I don't think that it's the number that qualifies it, but rather the scope/purpose of the conflict. If it's a one-on-one fight as part of a war (e.g. David vs. Goliath) then yes, it would be an earthly battle. If it's a fight that is not part of a military campaign, like with Levi and Simeon's revenge spree, then it doesn't matter how many are involved, it wouldn't be an earthly bottle.
