Can I attack an opponent when they don't have any lost souls and then after them not presenting a blocker activating Harvest Time and rescue the lost soul with the character that I attacked with or would it still be considered a battle attempt and my hero would return home?

You may make a battle challenge and play Harvest Time to make it a rescue attempt, but your opponent would get another chance to block.
I am not talking about T2 unless I am explicitly talking about T2. Also Mayhem is fine now somehow!

Yes the same thing would work if you successfully defeat an evil character and then they play like son of god on the shuffler. Then you can play harvet time and get that lost soul. It would also work for burial on their only lost soul in play too.

I have a question about that scenario, which has come up with me a few times. ...

If I've got this right, the battle starts off as a ra, and then I block and my opponent plays AotL to get rid of my evil character. So I play SoG or Burial or something to get rid of my remaining Lost Souls, which makes it a battle challenge, right? Then when my opponent plays HT to put a LS in play, the battle would change from a BC to an RA, right? Does that give me another chance to block?

You would have to play your Burial/Son of God (whichever you didn't play the first time) to stop the RA or your opponent would get it.  Or you could use an Unholy Writ or Unknown Nation in battle.
