can I play swift horses to interrupt, but before playing an enh, play grapes of wrath?

when you play grapes, what happens to site in battle?

are sites good, bad, or neither?

You have to complete all abilities before you can play a dominant. However, you can pass and then play grapes.

Since Grapes only shuffle characters the site would go back to territory just like it would in any other battle.

Depends on the site ::)  Sites are neutral.

but fi the purpose was to interrupt, then the interrupted SA would resume before you could play grapes....

The second sentence wasn't necessarily a rule it was merely a suggestion. I should of added in parenthesis 'after all abilities are completed'.
