If I play Grapes, and I get to start a new rescue, can I play Mayhem (to draw a hero) and rescue with the drawn hero?

Grapes must be done s0n. After playing it, you must either present a hero or forfeit the new rescue.

Nope. Grapes has to finish before any card can be played, so you have to start the new rescue first, if you play Mayhem you are giving up the second half of grapes.

Chris Bany tried that play on me at NC Regionals.  He was not a happy camper when he didn't get another rescue after his Mayhem. ::)
Have you visited the Land of Redemption today?
