A successful block is a block that has prevented the opponent from rescuing a soul.

i thought i saw a ruling that said a block was anytime a EC and a hero met in battle, am i mistaken?

You are correct that a block is any time the EC opposes a hero in battle.

It was initially ruled at nationals that a successful block did not occur when blocking a BC but later multiple elders ruled an EC can successfully block a BC (see King Tiglath).

As far as I know, successful block has always been when evil wins against good (even in BC) because they receive experience credit in T2 regardless of the type of battle (RA or BC, obviously not for side battles).

so then as long as the EC survives battle or all cards are discarded in battle via special ability then the EC successfully blocks?

Does grapes of wrath count as a successful block even if they come again and rescue a soul? and what if they don't?

REG defines successful block as:

Successful Block
A successful block occurs when the Hero(es) in battle do not accomplish their goal. This can mean different things for Rescue Attempts and Battle Challenges. If at any point, the battle was a Rescue Attempt, then a successful block occurs anytime no Lost Soul is rescued during Battle Resolution. If the battle began as a Battle Challenge and never became a Rescue Attempt, a successful block can happen in any of the following ways:
 All attacking Heroes are removed from the Field of Battle before Battle Resolution by a special ability.
 The battle ends in a stalemate.
 The battle ends with the blocking Evil Character(s) defeating the Hero(es) by total
strength and toughness comparison.

Clayton, yes. The first battle in which Grapes was played has a successful block.
