If I defend with False Priests "You may play one False Peace Enhancement from discard pile.  If you do, remove that card from the game after it takes effect."  Can you use someone else's False Peace or does it have to be your own?

You can discard anybody's False Peace that is in your discard pile.

The catch is, you are only allowed to have your own cards in your own discard pile.
