I have Joseph in battle.  I play Faith of Enoch and place it on my Cloud Hero.  Still my initiative, I play Book of Jashar.  Can I place Book of Jashar on another of my Cloud Heroes, and have it work the same as Faith of Enoch?

Faith of Enoch - Place on your Cloud Hero:  If Hero is discarded by an opponent's evil special ability, you may remove this card from the game instead to rescue the Hero as if it were a Lost Soul.
If creation sings Your praises so will I

Yes, Book of Jashar can copy Faith of Enoch.

I believe the copy ability on Book of Jashar only persists through the phase in which it is played. At the end of the battle phase, when Book of Jashar ceases to copy Faith of Enoch I don't think it remains placed or retains the ability.

Is an "opponent's evil special ability" different than a "special ability used by an opponent"? In other words, does the discard have to come from an ability owned by an opponent in order for Faith of Enoch to rescue the hero?

Yes, there is a difference. "An opponent's" implies ownership and control. That means you can't force them to use one of your cards to trigger it.

"Used by and opponent" only requires control so you could choose the blocker with the right character to force a trigger.

According to the REG, Copy only lasts until the card leaves field of battle.  So you could place the original on a hero in territory and the copy on the rescuing hero to use it for the rest of the battle, but I don't see much more than that.

This is correct, once it is outside the Field of Battle (unless otherwise stated, such as "until end of turn"), the default is for the card's copying to stop.

At the end of the battle phase, when Book of Jashar ceases to copy Faith of Enoch I don't think it remains placed or retains the ability.

It does not retain the ability, but it does stay placed.  Place is an instant ability, and has completed by that point; it is not undone by Book of Jashar no longer being a copy.
