Davids music says,"Interrupt the battle and shuffle all opponent's demons into draw pile. Cannot be interrupted." I think you mean a different card.

Yes. Because it says 'Demons' if it said Demon then it would be only one.

It shuffles all the demon of ONLY the opponent you are in battle against.  Since the apostrophe is before the "s" in "opponent's", it refers only to one opponent, namely the one you are currently rescuing against.  If it said "opponents'" then it would shuffle all your opponents, but the word in this case used refers to a singular opponent.

Yep. Usually when I mention my opinions, I'm talking T1 2-player. I'm not as knowledgable in Multi or T2.
