A player’s hand is where a player holds all the cards that are not in their deck, Reserve, discard pile or banish pile but have not been played. Players put cards from their hand on the table to play them. By the end of each of their Discard Phases, a player must reduce their hand size to a maximum of 8 cards, unless modified by a Change Hand size effect.

So, the syntax of this explanation is all players have to put their hands to 8 during all Discard Phases, correct?

Only during their own. You can have as many cards as you want during other players' discard phases (if, for example, you draw from evil cards like Dream or Sabbath Breaker). Note the use of "their" in the last sentence of your quote.

Each of their discard phase is referring to the discard phase during each player’s respective turn. So at the end of your discard phase your hand size must be 8 or less cards prior to passing the turn to your opponent. At the end of your opponent’s discard phase he also must have 8 or less cards in his hand. Each player’s discard phase has no bearing on the other player’s hand; it only affects the active player’s hand.

So at the end of your discard phase your hand size must be 8 or less cards prior to passing the turn to your opponent. At the end of your opponent’s discard phase he also must have 8 or less cards in his hand. Each player’s discard phase has no bearing on the other player’s hand; it only affects the active player’s hand.

Oh so instead if it being "their" it should be understood as "your." Ok

"their" is simply a substitute for "his or her."
