Can I play a discard an EH in battle to negate it's ability if my card says can not be interrupted or prevented?

I don't understand what you're asking.

Could you either rephrase, or give an example with cards?

If you interrupt the battle and discard an EH, you are indirectly negating it (stopping it from taking effect). If you simply discard the EH, The EH ability will go through but they lose the numbers.

No. As Spicy said, discarding an enhancement does not negate it.
