If I play Evil Spirit on Potiphar's Wife to temporarily convert a hero, does Potiphar's Wife's SA work since the hero is technically no longer a hero?

Also, what about Temptation? Does a hero who was forced to withdraw count as a "defeated" hero?

If I block with Pot's Wife and them CM a hero, does the hero go into my opponent's LoB?

Nope, Pot's Wife has to defeat the EC.  CM can't do it for her.  As for what the definition of "defeat" is, you'll have to await the outcome of that other thread
