If i have CoS up for one turn, then flip it down for something else the next turn, would the heroes keep the 2/2 gain?

To my understanding, any cards that gives attribute gains, however if the covenant said "as long as it in play", then it won't.

All increase abilities on Artifacts (including Covs/Curses activated as Artifacts) are ongoing, and therefore last only as long as it's active.  So you lose the 2/2 if you switch to another Artifact.
