If I use Disturbing Sam's Spirit to get rid of a purple disciple, can I capture Simon the Zealot due to him being red/purple?

Yes. Just because Simon is also the same brigade doesn't invalidate the red half of him being a different brigade.

I believe that in all cases, if a card has more than one brigade, all you have to do is target one of the brigades for it to be effective (e.g. Ezekiel could be pulled out with Zadok Anoints Solomon, Reuben's Torn Clothing can be using to ignore pale green, which would let him ignore Damsel or Manny).

Agree with browarod and Chris.  Simon the Zealot is fully Red and fully Purple at the same time.  And that is why Zeal for the Lord can discard both Gomer and King Manasseh (a heavily debated play in past ruling questions).
