What would be a reason to use the Doubt dominant card?

Someone dares you to play a deck with one of each dominant.

In all seriousness though, unless you build a deck big enough to have as many dominants as you want, there are very few situations in which you'd want to use Doubt. Even though it can be kind of useful in an orange defense, as an EC with large toughness that can't be targeted by many battle winners (since a lot of cards target humans, demons, etc.), it is hard to justify using it over most of the other dominants that will generally be more useful.

Let's say you have a orange only brigade defense and your opponent has Three Nails artifact active " No demon may block while this artifact is in play"

If your demon defense can not block , then doubt can give you a chance to block.

or could be useful for cards like Hero card Nathan "You may shuffle an evil card in your territory into owner's deck to force your opponent to do the same. Cannot be negated."
