Corn Chowder (my aunt's recipe. It is good! )6 medium potatoes, peeled and chopped4 medium carrots, peeled and diced1/2 onion, chopped6 c. milk2 c. shredded cheddar cheese10-12 pieces bacon2 10.75 oz. cans cream of mushroom soup3 cans (14.5 oz. maybe?) creamed cornsaltBoil the potatoes and carrots for about 10-15 minutes or until partially cooked. Start crisping the bacon while the potatoes and carrots are cooking. Drain potatoes and carrots and add milk, soup, and creamed corn over medium heat. When bacon is done, drain all but 3 T. bacon fat and brown onion in bacon fat. Crumble bacon. Once soup is heated through, turn to med-high heat and add cheese; stir til dissolved. Add bacon and browned onions (with remaining bacon fat! Adds great flavor) and reduce heat. Season with salt and serve! Great compliment to soup:Sliced French/Italian breadButterGarlic powderButter each piece of bread liberally and sprinkle with garlic powder. Bake on 400 until crisp and golden brown (6-10 min usually).
