This is extremely subjective and depends on what one would consider iconic.

However, assuming you are looking for new art to go on a playmat for this year, there is but one choice:

The art on Holy Grail is the icon for Artifacts, and I don't think anything else appears both as the art on a card and the icon on other cards, so Holy Grail is clearly the most iconic. 

Iconic as in when you think of Redemption certain images come to mind.

I would buy a steam punk Que playmat...

And Kye is correct. It is a playmat.

Here are options I have come across that I think would get the most interest as a playmat:

Angelic Warrior
Babel
Creation of the World
Grapes of Wrath
Leviathan (FoM)
Que
Ride on Victoriously (flip concept)
Saul/Paul (flip concept)
Sheol
The Rainbow
The Wages of Sin

The list above is not ranked, but alphabetical.  I included consideration for the cards in your original post as well, but certainly could have missed a good option.  Some of them just seemed uneventful.  For instance, Holy Grail made my initial list of “iconic”, but I don’t see myself ever buying a playmat that just has grail on it.

I think a “flip concept” is a good idea, but might be challenging with the art since Redemption Cards are created in portrait and the playmat would be landscape.  However, seems like it could work, especially with something like Ride on Victoriously.
