You can also go to your profile and select any theme you wish, including the SMF Default Theme. It's just that nearly everyone has it set to the "Forum Default", so they see whatever I command them to see.
For better or worse, the thing about most of the custom themes that were installed on our boards is that they use special custom menu buttons, so anything added to the menu by installing new add-ons won't appear on those.
