For newer players it's hard to go wrong with anything involving TGT since it's so straightforward, and basically pilots itself. Gardenciples is the best TGT variation so I would go with that.
Starter deck (I forget if it's G or H) + TGT tin = decent deck that will preform in locals/districts. Can easily be greatly improved by fairly inexpensive cards, too.
What kind of defense would go with that?
i would go garden-disciples or watertomb since that doesn't need HT which costs a pretty penny and for defense i have no idea

All the protection and craziness of Disciples is not simple (and remember that it was also a huge debate regarding what 'protection' means), and TGT involves ignore. If you've been on Ruling Questions anytime in the last 4 months, what makes you think Ignore is simple? For a brand new player, I'd go with Red Banding. It is still a legitimate option, has some fun abilities (but not the most confusing ones), and deals mostly with banding and discarding.I wouldn't ever suggest a Plot defense to a new player (who wants to learn how to play a game by ripping their cards?), but I would suggest something like Egyptians. Again, simpler abilities (band and draw, mostly) and it can be small enough while giving a draw support for your offense.It may not win it all, but it's great to learn the game.
