For the final week of the tournament, I put together an offense I have used on occasion before, Colossae-based Clay. With the focus of the past few sets being on OT themes, Clay has not gotten many cards, but even just using some of the new Lost Souls to get a faster start (such as using Remnant or Exiles to find a turn 1 Epaphras) makes this offense very formidable. The biggest drawback to playing a NT offense is that you can't use Storehouse to grab your GE (since the best Clay GE are NT), which is definitely a significant disadvantage to NT themes (both for offense and defense). The defense was a fun little Magician-based defense with lots of drawing and some powerful blocking options.
